Calabria Private Bin Pinot Bianco
A unique white wine, produced from a single vineyard from local family growers in the Riverina. Great richness and toasty flavours with a savoury finish.
Delicate fragrances of green melon and white peach. The soft creamy palate is richly textured and full-bodied with flavours of ripe peach, grapefruit and hints of fresh garden herbs. The savoury dry finish is long and lingering. Consequently, the wine will cellar well for the medium to long term developing greater richness and toasty complex flavours.
The Pinot Bianco grape bunches are harvested at night to preserve freshness, then fully destemmed, lightly crushed and softly pressed to extract the aromatic juice. The lightly clarified juice with some grape solids is fermented in older hogshead barrels with natural ‘wild’ yeast which leads to a long warm ferment. Once dry thewine is aged in the same barrels on ‘lees’ for six months before blending, stabilisation and filtration for bottling. The Calabria Pinot Bianco has been made in the ‘vino da casa’ style of the family ancestry. The wine was made traditionally using ancient techniques of natural yeast barrel fermentation with solids, without fining, and minimal filtration. Consequently the wine will cellar well for the medium to long term developing greater richness and toasty complex flavours.
Serve chilled with roast chicken with garden herbs and lemon sauce.
